- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup (200 g) long-grain rice, cooked
- 1 can (14.5 oz / 411 g) diced tomatoes
- 1 can (10.5 oz / 298 g) condensed cream of mushroom or tomato soup
- 1 cup (240 ml) beef broth
- 1 cup (100 g) shredded cheddar or mozzarella cheese
- 1 tsp (5 g) salt
- ½ tsp (2 g) black pepper
- ½ tsp (1 g) paprika (optional)
- 1 tbsp (15 ml) olive oil or butter
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until fragrant and translucent.
- Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess grease.
- Stir in cooked rice, diced tomatoes, condensed soup, beef broth, salt, pepper, and paprika. Mix until well combined.
- Transfer the mixture into a greased casserole dish. Top with shredded cheese.
- Bake at 350°F (175°C) for 20 minutes or until the cheese is melted and bubbly.
- Let it rest for a few minutes before serving.
Notes
- Substitute cream of mushroom soup with cream of chicken or a homemade white sauce if preferred.
- For a lighter version, use ground turkey and reduced-fat cheese.
- Add extra vegetables like bell peppers or corn for more texture and nutrition.
- Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
