Brownie Layer:

  • 1 cup all-purpose flour

  • 2 tbsp Dutch cocoa powder

  • 3/4 tsp salt

  • 1/2 tbsp red food coloring

  • 100g chopped chocolate (optional)

Cheesecake Layer:

  • 8 oz full-fat cream cheese

  • 1 large egg white

  • 1/4 cup granulated sugar

  • 1/2 teaspoon vanilla extract

  • (optional) 2 tbsp heavy cream


Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  • Make the brownie base: Melt butter and chocolate together until smooth. Remove from heat. Mix in sugars, eggs, vanilla, and vinegar.

  • Stir in cocoa powder, flour, salt, and food coloring until fully combined. Add chopped chocolate if using.

  • Spread brownie batter into prepared pan evenly.

  • Make cheesecake swirl: In another bowl, beat cream cheese and sugar until smooth. Add vanilla, egg white, and cream. Mix until silky.

  • Swirl: Drop spoonfuls of cheesecake mixture on top of brownie batter. Use a knife or skewer to create swirls.

  • Bake for 30–35 minutes or until edges are set and center slightly jiggles.

  • Cool completely at room temperature, then chill in the refrigerator for 2–3 hours before slicing.

Notes

Use gel food coloring for a deeper red hue.

Warm slices briefly in the microwave for a gooey texture.
