Ingredients

  • 1 lb ground beef
  • 3 medium potatoes, sliced thinly
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup milk


Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a large skillet and brown the ground beef with diced onion and garlic.
  3. Drain excess fat and season with salt, pepper, and oregano.
  4. Layer the bottom of a 9×13-inch baking dish with sliced potatoes, then add half of the browned beef mixture.
  5. Repeat with another layer of potatoes and the remaining beef.
  6. In a bowl, mix the cream of mushroom soup, sour cream, and milk. Pour over the casserole layers.
  7. Top with shredded cheddar cheese and cover with aluminum foil.
  8. Bake for 40 minutes, then uncover and bake for an additional 10 minutes to brown the cheese.
  9. Let rest for 10 minutes before serving.

Notes

  1. You can make this casserole ahead of time and refrigerate it for up to 24 hours before baking.
  2. For a spicier version, add some cayenne pepper or hot sauce.
  3. Frozen potatoes can be used, but fresh potatoes give a better texture.
