- 3 medium potatoes, sliced thinly
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can cream of mushroom soup
- 1/2 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup milk
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large skillet and brown the ground beef with diced onion and garlic.
- Drain excess fat and season with salt, pepper, and oregano.
- Layer the bottom of a 9×13-inch baking dish with sliced potatoes, then add half of the browned beef mixture.
- Repeat with another layer of potatoes and the remaining beef.
- In a bowl, mix the cream of mushroom soup, sour cream, and milk. Pour over the casserole layers.
- Top with shredded cheddar cheese and cover with aluminum foil.
- Bake for 40 minutes, then uncover and bake for an additional 10 minutes to brown the cheese.
- Let rest for 10 minutes before serving.
