Ingredients
4 cups chopped fresh rhubarb
¾ cup granulated sugar
¼ cup water
1 tbsp lemon juice
Optional: ½ tsp vanilla extract or cinnamon, 1 tsp orange zest, 1 cup chopped strawberries
Instructions
Wash and trim rhubarb, then chop into ½-inch pieces.
Combine rhubarb, sugar, and water in a medium saucepan.
Bring to a boil over medium-high heat, then reduce to a simmer.
Cook for 10–15 minutes, stirring occasionally, until the rhubarb breaks down.
Stir in lemon juice and optional flavorings.
For a smooth texture, puree with a blender.
Let cool before serving or storing.
Notes
Adjust sugar to taste based on the rhubarb’s tartness.
Sauce thickens as it cools.
Store in the fridge up to 10 days or freeze for 6 months.
For savory use, reduce sugar and add spices like ginger or garlic.
