These honey roasted carrots are tender, caramelized, and perfectly glazed with a sweet-savory mix of honey, olive oil, and herbs — an easy side dish for any meal.
Ingredients
2 pounds carrots, peeled and cut into even sticks or use baby carrots
2 tablespoons honey
2 tablespoons olive oil or melted butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder (optional)
1/2 teaspoon dried thyme or rosemary (optional)
Fresh parsley for garnish
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Wash, peel, and slice carrots evenly. Add to a mixing bowl.
3. Whisk together honey, olive oil, salt, pepper, and optional herbs, then pour over carrots. Toss to coat well.
4. Spread carrots on the baking sheet in a single layer. Roast for 20–25 minutes, flipping halfway through until tender and slightly caramelized.
5. Transfer to a serving dish, drizzle any remaining glaze from the pan, and garnish with fresh parsley before serving.
Notes
For best results, avoid overcrowding the baking sheet so the carrots roast instead of steam. Use rainbow carrots for a colorful presentation.
