Ingredients
12 oz short pasta
3 cups fresh arugula
3 tbsp lemon juice
1 tbsp lemon zest
4 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shaved Parmesan cheese
1 cup cherry tomatoes, halved (optional)
1/3 cup toasted walnuts or pumpkin seeds (optional)
Instructions
Cook pasta until al dente and cool completely.
Whisk lemon juice, lemon zest, olive oil, salt, and pepper.
Toss pasta with the dressing until fully coated.
Fold in arugula and any optional ingredients.
Chill briefly before serving for best texture.

Add arugula right before serving to prevent wilting.
