  • 1 pound ground beef (80/20 preferred)

  • 1 cup sweet corn (canned or frozen)

  • 1 cup sour cream

  • 1 packet ranch seasoning mix

  • ½ cup cream cheese (softened)

  • 2 cups shredded cheddar cheese (divided)

  • Salt and black pepper, to taste

  • ½ cup breadcrumbs (optional, for topping)

  • 1 tablespoon butter (melted, optional for topping)


Instructions

  • Preheat oven to 375°F (190°C).

  • Boil rotini pasta in salted water until al dente (7–8 minutes). Drain and set aside.

  • In a large skillet, cook the ground beef over medium heat until browned. Break into crumbles and drain excess fat.

  • In a mixing bowl, combine sour cream, ranch seasoning, and cream cheese. Mix until smooth.

  • Add cooked beef, corn, and cooked pasta to the bowl. Stir to coat everything in the creamy ranch mixture.

  • Stir in 1½ cups of shredded cheddar cheese.

  • Pour the mixture into a greased 9×13-inch baking dish.

  • Top with the remaining ½ cup of cheddar cheese. If desired, mix breadcrumbs with melted butter and sprinkle on top.

  • Bake uncovered for 20–25 minutes, until bubbly and golden brown on top.
