Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
For the Filling:
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
3 large eggs
¼ cup fresh lemon juice
¼ cup fresh lime juice
1 tsp vanilla extract
For Topping:
½ cup chopped pistachios
Whipped cream (optional)
Whole cherries or cherry sauce (optional)
Instructions
Prepare the crust: Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly combined. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool slightly.
Make the filling: In a large bowl, beat the cream cheese until smooth. Add sugar and mix well. Add eggs one at a time, beating after each addition. Stir in lemon juice, lime juice, and vanilla extract. Mix until just combined—do not overmix.
Bake: Pour the filling over the crust and smooth the top. Bake at 325°F (163°C) for 50–60 minutes. The edges should be set, and the center should jiggle slightly.
Cool: Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour. Then refrigerate for at least 4 hours or overnight.
Serve: Top with whipped cream, chopped pistachios, and cherries or cherry sauce just before serving. Slice and enjoy!

Avoid overmixing to reduce cracks.
