Description

This creamy and comforting Marry Me Chicken Soup combines tender chicken, sun-dried tomatoes, garlic, parmesan, and herbs in a rich, velvety broth that’s perfect for cosy dinners, family meals, or romantic nights in.


Ingredients

  • lbs boneless skinless chicken thighs

  • 1 tbsp olive oil

  • ½ yellow onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • ½ cup sun-dried tomatoes (in oil), chopped

  • 1 tsp Italian seasoning

  • ¼ tsp red pepper flakes (optional)

  • ¾ cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 cup baby spinach (optional)

  • Salt and black pepper, to taste


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the chicken thighs until golden on both sides. Remove and set aside.

  2. In the same pot, sauté diced onion and garlic until fragrant and translucent.

  3. Pour in chicken broth, scraping up any browned bits from the bottom.

  4. Add sun-dried tomatoes, Italian seasoning, and red pepper flakes. Return chicken to the pot.

  5. Simmer for 20 minutes until the chicken is cooked through.

  6. Remove chicken, shred it, and return it to the soup.

  7. Reduce heat and stir in heavy cream and parmesan cheese. Simmer gently until thickened.

  8. Add spinach (if using) and stir until wilted.

  9. Season with salt and black pepper to taste. Serve hot.

Notes

For a shortcut, use shredded rotisserie chicken.

Add orzo, gnocchi, or rice for a heartier meal.

To freeze, omit the cream and cheese, then add them when reheating.

Substitute coconut milk for a dairy-free option.
