- 2 cups pancake mix (just-add-water type)
- 1 cup cooked breakfast sausage, crumbled and drained
- 1 cup shredded cheddar cheese
- ⅔ cup water or milk
- 2 tablespoons maple syrup (plus more for serving)
- Optional: pinch of salt and dash of black pepper
Instructions
- Preheat oven to 400°F and lightly grease a mini muffin pan.
- Brown the sausage in a skillet over medium heat and drain any excess fat.
- In a large bowl, mix pancake mix, water or milk, and maple syrup until combined.
- Fold in the sausage and cheddar cheese gently.
- Spoon the batter into the muffin pan, filling each about three-quarters full.
- Bake 12–15 minutes or until golden brown and cooked through.
- Cool slightly and serve warm with maple syrup.
Notes
- Avoid overmixing the batter to keep bites fluffy.
- Store leftovers in an airtight container in the fridge for up to 5 days or freeze up to 3 months.
- Reheat in microwave for 20 seconds or in oven for 5 minutes at 350°F.
