Description

These McGriddle Bites capture all the warm, syrupy, cheesy goodness of the classic sandwich without the drive-thru wait. Soft, golden, and full of maple flavor, they make the perfect sweet and savory breakfast treat.


Ingredients

  • 2 cups pancake mix (just-add-water type)
  • 1 cup cooked breakfast sausage, crumbled and drained
  • 1 cup shredded cheddar cheese
  • ⅔ cup water or milk
  • 2 tablespoons maple syrup (plus more for serving)
  • Optional: pinch of salt and dash of black pepper


Instructions

  1. Preheat oven to 400°F and lightly grease a mini muffin pan.
  2. Brown the sausage in a skillet over medium heat and drain any excess fat.
  3. In a large bowl, mix pancake mix, water or milk, and maple syrup until combined.
  4. Fold in the sausage and cheddar cheese gently.
  5. Spoon the batter into the muffin pan, filling each about three-quarters full.
  6. Bake 12–15 minutes or until golden brown and cooked through.
  7. Cool slightly and serve warm with maple syrup.

Notes

  1. Avoid overmixing the batter to keep bites fluffy.
  2. Store leftovers in an airtight container in the fridge for up to 5 days or freeze up to 3 months.
  3. Reheat in microwave for 20 seconds or in oven for 5 minutes at 350°F.
