Description

Juicy Mediterranean Chicken Gyros made with yogurt-marinated chicken, warm pita, creamy tzatziki, and fresh vegetables. A flavorful, easy homemade version that’s perfect for weeknight dinners or meal prep.

  • 2 lb boneless skinless chicken thighs
  • 1 cup plain Greek yogurt
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 pita breads
  • 1 cup tzatziki sauce
  • 1 cup sliced cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup thinly sliced red onion
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup crumbled feta cheese


Instructions

  1. In a large bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
  2. Add the chicken thighs and coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes or up to 12 hours.
  3. Heat a large skillet or grill pan over medium-high heat with a light drizzle of olive oil.
  4. Cook the marinated chicken for 5–7 minutes per side until golden brown and fully cooked.
  5. Remove the chicken from heat and let it rest for 5 minutes, then slice thinly against the grain.
  6. Warm the pita breads until soft and pliable.
  7. Assemble the gyros by filling each pita with sliced chicken, tzatziki, cucumber, tomatoes, red onion, parsley, and feta cheese.
  8. Serve immediately while warm.

Notes

  1. Chicken breasts can be used instead of thighs but may be slightly less juicy.
  2. For extra flavor, marinate the chicken overnight.
  3. Serve as a bowl with rice or salad for a gluten-free option.
  4. Store leftover chicken separately from toppings for best freshness.
