- 2 lb boneless skinless chicken thighs
- 1 cup plain Greek yogurt
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 6 pita breads
- 1 cup tzatziki sauce
- 1 cup sliced cucumber
- 1 cup chopped tomatoes
- 1/2 cup thinly sliced red onion
- 2 tbsp fresh parsley, chopped
- 1/4 cup crumbled feta cheese
Instructions
- In a large bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
- Add the chicken thighs and coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes or up to 12 hours.
- Heat a large skillet or grill pan over medium-high heat with a light drizzle of olive oil.
- Cook the marinated chicken for 5–7 minutes per side until golden brown and fully cooked.
- Remove the chicken from heat and let it rest for 5 minutes, then slice thinly against the grain.
- Warm the pita breads until soft and pliable.
- Assemble the gyros by filling each pita with sliced chicken, tzatziki, cucumber, tomatoes, red onion, parsley, and feta cheese.
- Serve immediately while warm.
Notes
- Chicken breasts can be used instead of thighs but may be slightly less juicy.
- For extra flavor, marinate the chicken overnight.
- Serve as a bowl with rice or salad for a gluten-free option.
- Store leftover chicken separately from toppings for best freshness.
