For the Crust:

  • 2 1/4 cups graham cracker crumbs (about 14 crackers)

  • 1/3 cup melted butter

  • 1/4 cup sugar

For the Filling:

  • 3 blocks (8 oz each) cream cheese, softened

  • 1 cup powdered sugar

  • 2 teaspoons vanilla extract

  • 1/2 cup sour cream

  • 2 large eggs

For the Strawberry Swirl:

  • 1 lb fresh strawberries

  • 1/2 teaspoon cornstarch (for every 1/2 cup strawberries)

  • 1 teaspoon lemon juice

Topping (optional):

  • Fresh strawberries

  • Whipped cream


Instructions

  • Prepare the Crust:

    • Preheat oven to 350°F (175°C).

    • Pulse graham crackers into fine crumbs. Mix with sugar and melted butter.

    • Press into the bottom of a springform pan.

    • Pre-bake for 4–5 minutes until lightly golden. Cool completely.

  • Make the Strawberry Swirl:

    • Blend strawberries with cornstarch and lemon juice until smooth.

    • Simmer on the stove for a few minutes until thickened. Cool before using.

  • Prepare the Filling:

    • Beat cream cheese until smooth. Add powdered sugar and vanilla.

    • Mix in sour cream, then add eggs one at a time. Mix until just combined.

  • Assemble the Cheesecake:

    • Pour filling over crust. Spoon strawberry puree on top and swirl with a knife.

  • Bake:

    • Reduce oven to 325°F (163°C).

    • Use a water bath if desired. Bake for 55–65 minutes until the center jiggles slightly.

  • Cool & Chill:

    • Let cool in the oven with the door slightly open for 1 hour.

    • Chill in the fridge for at least 6 hours, preferably overnight.

  • Serve:

    • Garnish with whipped cream and fresh strawberries.
