  • 1 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: 1 cup blueberries or chocolate chips

Instructions

  • Preheat oven to 375°F. Line a muffin tin with paper liners.

  • In a large bowl, whisk together Greek yogurt, melted butter, eggs, sugar, and vanilla.

  • In a separate bowl, combine flour, baking soda, and salt.

  • Gradually mix the dry ingredients into the wet mixture until just combined.

  • Fold in any optional add-ins such as blueberries or chocolate chips.

  • Fill muffin cups about ¾ full.

  • Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.

Notes

Do not overmix the batter to keep the muffins tender.
