These muffins with Greek yogurt are moist, fluffy, and protein-rich. They’re perfect for breakfast or snacks and come together with simple ingredients. Customize them with fruit, nuts, or chocolate chips for endless variety.
Ingredients
1 cup Greek yogurt
1/4 cup melted butter
2 eggs
1/2 cup sugar
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp vanilla extract
Pinch of salt
Optional: 1 cup blueberries or chocolate chips
Instructions
Preheat oven to 375°F. Line a muffin tin with paper liners.
In a large bowl, whisk together Greek yogurt, melted butter, eggs, sugar, and vanilla.
In a separate bowl, combine flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet mixture until just combined.
Fold in any optional add-ins such as blueberries or chocolate chips.
Fill muffin cups about ¾ full.
Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
Notes
Do not overmix the batter to keep the muffins tender.
Use full-fat or low-fat plain Greek yogurt for best results.
Muffins can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
Reheat frozen muffins in the microwave for 20 seconds.
