For the Chicken:
2 boneless, skinless chicken breasts
1 cup panko breadcrumbs
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1 tbsp lemon juice
Oil for frying (or spray for air fryer)
For the Caesar Dressing (optional or store-bought):
1/2 cup Greek yogurt or mayo
1 clove garlic, minced
2 tbsp grated Parmesan
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp Worcestershire sauce
2 anchovy fillets (optional)
Salt and pepper, to taste
For Assembly:
2 large croissants, halved
2 tbsp butter (for croissants)
2 tbsp grated Parmesan (for croissants)
1 cup chopped romaine lettuce
1 avocado, sliced
Optional: sriracha mayo or hot honey drizzle
Instructions
Make the Dressing: Combine all Caesar dressing ingredients in a blender or whisk until smooth. Adjust seasoning to taste. Refrigerate until needed.
Prepare Chicken: Season chicken with salt, pepper, garlic powder, and lemon juice. Coat in panko breadcrumbs.
Cook Chicken:
Skillet: Heat oil in a skillet to 350°F. Fry chicken until golden brown and cooked through, about 4–5 minutes per side.
Air Fryer: Preheat to 375°F. Cook for 12–14 minutes, flipping halfway.
Toast Croissants: Spread butter on croissant halves. Sprinkle with Parmesan. Broil for 1–2 minutes until golden and crisp.
Assemble Sandwiches: On each bottom croissant half, layer romaine, sliced avocado, crispy chicken, and Caesar dressing. Top with the other croissant half. Secure with a skewer if desired.
Serve: Pair with fries, salad, or a pickle spear. Enjoy warm.
Notes
For a spicy twist, add sriracha mayo.
Use gluten-free breadcrumbs and croissants if needed.
Toasting the croissant prevents sogginess.
Store dressing for up to 5 days in the fridge.
Use rotisserie chicken for a quick version.
