Description

This oatmeal apple breakfast bake is a cozy, make-ahead breakfast filled with baked apples, warm cinnamon, and maple sweetness. Perfect for fall mornings or weekend brunch.


Ingredients

  • 1 1/2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 2 medium apples, diced
  • 1/4 cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins (optional)


Instructions

  1. Preheat oven to 350°F and lightly grease a 9×9-inch baking dish.
  2. In a large bowl, mix rolled oats, baking powder, cinnamon, nutmeg, salt, and optional nuts or raisins.
  3. In another bowl, whisk milk, eggs, maple syrup, melted butter, and vanilla until smooth.
  4. Combine wet and dry ingredients, then fold in diced apples evenly.
  5. Pour mixture into the baking dish and smooth the top.
  6. Bake for 35–40 minutes or until golden brown and set in the center.
  7. Cool for 5 minutes before slicing. Serve warm with yogurt or maple syrup.

Notes

  1. Use rolled oats for the best texture—avoid quick oats or steel-cut oats.
  2. If using very sweet apples, slightly reduce the maple syrup.
  3. You can assemble this the night before and bake fresh in the morning.
