- 2 medium apples, diced

- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder

Instructions
- Preheat oven to 350°F and lightly grease a 9×9-inch baking dish.
- In a large bowl, mix rolled oats, baking powder, cinnamon, nutmeg, salt, and optional nuts or raisins.
- In another bowl, whisk milk, eggs, maple syrup, melted butter, and vanilla until smooth.
- Combine wet and dry ingredients, then fold in diced apples evenly.
- Pour mixture into the baking dish and smooth the top.
- Bake for 35–40 minutes or until golden brown and set in the center.
- Cool for 5 minutes before slicing. Serve warm with yogurt or maple syrup.
Notes
- Use rolled oats for the best texture—avoid quick oats or steel-cut oats.
- If using very sweet apples, slightly reduce the maple syrup.
- You can assemble this the night before and bake fresh in the morning.
