Ingredients
-
1 lb ground beef (85/15 lean)
-
1 small onion, diced
-
2 cloves garlic, minced
-
2 cups beef broth
-
1 cup milk
-
2 cups dry pasta (penne, rotini, or medium shells recommended)
-
1 packet ranch seasoning mix (or 3 tbsp homemade mix)
-
2 cups shredded cheddar cheese (freshly grated preferred)
-
Salt and pepper, to taste
-
1 tbsp olive oil or butter (optional for sautéing)
-
Optional garnish: chopped parsley or chives, extra cheddar, ranch seasoning
Instructions
-
Brown the Beef: In a large pot over medium heat, cook ground beef and diced onions until no longer pink. Drain excess fat if needed. Add minced garlic and cook for 30 seconds more.
-
Add Liquids & Pasta: Pour in beef broth and milk. Stir in pasta and ranch seasoning. Make sure the pasta is submerged.
-
Simmer: Bring to a gentle boil, then reduce heat. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
-
Add Cheese: Remove from heat and stir in shredded cheddar cheese until melted and creamy.
-
Serve: Garnish with chopped parsley or chives. Serve warm.
Notes
Use freshly shredded cheese for a smoother, creamier texture.
Add a splash of milk when reheating to loosen the sauce.
Add veggies like spinach or bell peppers in the last few minutes of cooking.
Substitute ground turkey or chicken for a lighter version.
Spice it up with red pepper flakes or hot sauce.
