A creamy and comforting one-pot dinner made with tender gnocchi, shredded chicken, vegetables, and a rich pot pie–style sauce.


Ingredients

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 medium carrots, diced
  • 2 celery ribs, diced
  • 1 cup sliced mushrooms
  • 3 garlic cloves, minced
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 pound potato gnocchi
  • 2 cups cooked shredded chicken
  • 1 cup frozen peas


Instructions

  1. Sauté onions, carrots, celery, and mushrooms in butter until softened.
  2. Stir in garlic, poultry seasoning, thyme, salt, and pepper.
  3. Sprinkle flour over vegetables and cook briefly.
  4. Pour in chicken broth and milk, stirring until smooth.
  5. Add gnocchi and simmer until tender.
  6. Stir in shredded chicken and peas, adjusting seasoning as needed.

Notes

  1. Add extra broth or milk when reheating to maintain creaminess.
  2. Use rotisserie chicken for faster preparation.
