Ingredients

  • pounds boneless skinless chicken breasts or thighs, cut into pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1½ cups dry orzo pasta
  • 3 cups low-sodium chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 1 cup chopped spinach or asparagus (optional)


Instructions

  1. Heat olive oil and butter in a skillet and sear the chicken until golden.
  2. Toast the dry orzo in the same pan to enhance flavor.
  3. Add broth, herbs, garlic, salt, and pepper, then simmer until orzo is tender.
  4.  Remove from heat and fold in Parmesan until creamy.
  5. Add spinach or asparagus at the end, letting residual heat soften the vegetables.

Notes

  1. Add a splash of broth when reheating to maintain creaminess.
  2. Use freshly grated Parmesan for best melting and flavor.
  3. Toast orzo longer for a deeper nutty taste.
