Shrimp & Prep:

  • 1 lb jumbo shrimp (1620 count), peeled and deveined (tails optional)

  • 2 tsp salt (for soaking)

  • 1 tsp baking soda (for soaking)

Breading Station:

  • ½ cup all-purpose flour

  • 1 tbsp cornstarch (optional, for extra crispiness)

  • Salt and pepper, to taste

  • 2 large eggs, beaten

  • 1 cup panko breadcrumbs

Optional Seasonings:

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Pinch of cayenne pepper (optional)

For Frying:

  • Neutral oil (vegetable, avocado, or peanut oil)


Instructions

  • Prepare Shrimp
    Peel and devein the shrimp. Soak in a bowl with 2 tsp salt and 1 tsp baking soda in water for 20 minutes. Rinse and pat dry.

  • Season & Set Up Station
    Mix flour with cornstarch, salt, pepper, and any desired spices. Prepare beaten eggs in another bowl and panko in a third.

  • Bread the Shrimp
    Dredge shrimp in flour, then egg, then panko—pressing crumbs gently to adhere. Optional: Chill breaded shrimp in the fridge for 30 minutes to help coating stick.

  • Fry or Air Fry

    • Deep Frying: Heat oil to 340–350°F. Fry shrimp in batches for 2–3 minutes until golden. Drain on a wire rack.

    • Air Frying: Preheat to 350°F. Lightly spray the basket and shrimp. Cook for 8–10 minutes, flipping halfway.

  • Serve
    Serve hot with dipping sauces like cocktail sauce, tartar sauce, or spicy mayo.

Notes

Use large or jumbo shrimp for best results.

Chilling the breaded shrimp before frying helps the coating stay on.

Avoid overcrowding during frying to keep shrimp crispy.

Pre-breaded shrimp can be frozen and fried later, directly from frozen.
