These Pistachio Raspberry Cheesecake Cupcakes blend the sweet-tart flavor of raspberries with the creamy richness of pistachio-infused cheesecake. Baked in cupcake form, they’re elegant, portable, and perfect for birthdays, weddings, or just a sweet moment for yourself.

Ingredients

Scale

Cupcake Base:

  • 1½ cups all-purpose flour

  • 1 cup granulated sugar

  • ½ cup pistachio spread

  • 2 large eggs

  • ½ cup chopped pistachios

  • 1 cup unsalted butter, softened

  • 1 cup sour cream

  • 1 tsp vanilla extract

Raspberry Cheesecake Filling:

  • 1 cup double cream

  • 1 cup pistachio cream spread

  • 1 cup icing sugar

  • 1 cup fresh raspberries, pureed or lightly mashed

  • ½ cup sour cream

Optional Decorations:

  • Fresh raspberries

  • Chopped pistachios

  • Powdered sugar

  • Raspberry jam

  • Whipped cream

Instructions

  • Preheat Oven: Set oven to 350°F (180°C). Line a muffin tin with cupcake liners.

  • Make Cupcake Batter: In a large bowl, cream butter and sugar. Add eggs, vanilla, sour cream, and pistachio spread. Mix until smooth. Stir in flour and chopped pistachios until just combined.

  • Prepare Cheesecake Filling: Beat double cream, pistachio cream, icing sugar, and sour cream until smooth. Gently fold in pureed raspberries. Chill the mixture while the cupcake base bakes.

  • Assemble and Bake: Fill each cupcake liner ⅔ full with batter. Add a spoonful of cheesecake filling in the center. Bake for 20–22 minutes or until the edges are lightly golden.

  • Cool and Decorate: Let cupcakes cool completely. Top with whipped cream, raspberry jam, fresh raspberries, chopped pistachios, or a dusting of powdered sugar as desired.

Notes

Use room temperature ingredients for smooth batter and filling.

Don’t overmix the batter to avoid dense cupcakes.

Chill the cheesecake filling before adding to stabilize the texture.

These cupcakes can be made a day in advance and refrigerated.
