  • 1 teaspoon red gel food coloring
  • 1215 Oreo cookies, chopped


Instructions

  1. Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. Mix crushed Oreo cookies with melted butter until evenly combined, then press firmly into the bottom of the pan to form the crust.
  3. Bake the crust for 10 minutes, remove from the oven, and let cool completely.
  4. In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  5. Add the eggs one at a time, mixing on low speed until just combined.
  6. Mix in sour cream, heavy cream, vanilla extract, and cocoa powder until smooth.
  7. Add red gel food coloring and mix gently until evenly colored.
  8. Fold in the chopped Oreo cookies.
  9. Pour the cheesecake batter over the cooled crust.
  10. Wrap the pan in foil and place it in a water bath.
  11. Bake for 38–45 minutes until the edges are set and the center slightly jiggles.
  12. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  13. Cool to room temperature, then refrigerate for at least 6 hours or overnight before slicing and serving.
