This refreshing cucumber lemonade sweetened with honey is a healthy, hydrating drink perfect for summer days. It combines the cooling flavor of cucumber, the tang of lemon, and the smooth sweetness of natural honey for a beverage that’s as delicious as it is nourishing.
Ingredients
1 large cucumber, peeled and chopped
3–4 fresh lemons, juiced (about ½ cup)
¼ cup honey
4–5 cups cold water (adjust to taste)
Ice cubes (optional, for serving)
Optional: mint leaves, grated ginger, lime
Instructions
Peel and chop the cucumber.
Juice the lemons to get about ½ cup of fresh lemon juice.
In a blender, combine cucumber, lemon juice, honey, and 2 cups of water. Blend until smooth.
Optional: Strain the mixture using a fine mesh sieve for a smoother drink.
Pour into a pitcher and add remaining cold water to taste.
Chill in the refrigerator or serve immediately over ice. Garnish with cucumber slices, lemon wheels, or mint.
Notes
For a fizzy version, replace part of the water with sparkling water before serving.
Straining is optional; leaving the pulp adds texture and nutrients.
Use local or raw honey for more health benefits and flavor.
English cucumbers work best due to fewer seeds and a milder taste.
