The Steak Bomb Sandwich is a bold, savory New England classic made with shaved steak, sautéed onions, peppers, and mushrooms, smothered in melted provolone cheese and stuffed into a soft, toasted roll. Ingredients

1½ pounds shaved steak (ribeye or sirloin recommended)

1 tablespoon butter or olive oil

1 large onion, thinly sliced

1 bell pepper (red or green), thinly sliced

1 cup sliced mushrooms (optional)

Salt and pepper, to taste

4–6 slices provolone cheese

4–6 sub or hoagie rolls, sliced lengthwise

Optional additions: Genoa salami, bacon, roasted red peppers, pepper relish
Instructions

Preheat a griddle or large skillet over medium-high heat.

Add butter or oil to the pan and sauté onions, bell peppers, and mushrooms until soft and slightly caramelized, about 6–8 minutes.

Push the vegetables to one side and add the shaved steak. Season with salt and pepper. Cook for 2–3 minutes, stirring frequently until browned.

Mix the vegetables and steak together on the griddle.

Top with slices of provolone cheese. Cover with a lid or metal bowl to melt the cheese over the meat mixture.

Toast the rolls cut-side down on the griddle for 1–2 minutes until golden.

Fill each roll with the cheesy meat and veggie mixture. Use a spatula to help shape the mixture for easy loading.

Notes
For extra richness, add a few slices of salami or bacon while cooking.
You can make the meat and veggie mixture ahead and reheat on a griddle before assembling.

Provolone melts smoothly and gives a traditional flavor, but feel free to substitute other cheeses like mozzarella or American.
