  • pounds shaved steak (ribeye or sirloin recommended)

  • 1 tablespoon butter or olive oil

  • 1 large onion, thinly sliced

  • 1 bell pepper (red or green), thinly sliced

  • 1 cup sliced mushrooms (optional)

  • Salt and pepper, to taste

  • 46 slices provolone cheese

  • 46 sub or hoagie rolls, sliced lengthwise

  • Optional additions: Genoa salami, bacon, roasted red peppers, pepper relish


Instructions

  • Preheat a griddle or large skillet over medium-high heat.

  • Add butter or oil to the pan and sauté onions, bell peppers, and mushrooms until soft and slightly caramelized, about 6–8 minutes.

  • Push the vegetables to one side and add the shaved steak. Season with salt and pepper. Cook for 2–3 minutes, stirring frequently until browned.

  • Mix the vegetables and steak together on the griddle.

  • Top with slices of provolone cheese. Cover with a lid or metal bowl to melt the cheese over the meat mixture.

  • Toast the rolls cut-side down on the griddle for 1–2 minutes until golden.

  • Fill each roll with the cheesy meat and veggie mixture. Use a spatula to help shape the mixture for easy loading.

Notes

For extra richness, add a few slices of salami or bacon while cooking.
