Ingredients
2 plain or everything bagels, halved and toasted
1/2 pound shaved steak (such as ribeye or sirloin)
4 eggs, scrambled
4 slices American or cheddar cheese
1 tbsp butter or olive oil
Salt and pepper, to taste
Optional add-ons: sautéed onions, mushrooms, avocado, jalapeños
Instructions
Toast bagels: Toast the bagel halves until golden and crisp. Set aside.
Cook steak: Heat butter or oil in a skillet over medium-high heat. Sear shaved steak for 1–2 minutes per side. Season with salt and pepper. Remove from pan and set aside.
Scramble eggs: In the same pan, cook scrambled eggs until soft and fluffy.
Assemble sandwiches: On the bottom half of each bagel, layer steak, scrambled eggs, and 2 slices of cheese. Top with sautéed veggies or add-ons if using.
Melt cheese: Optionally, place the open sandwiches under a broiler for 1–2 minutes to melt the cheese.
Top and serve: Close with the top bagel halves and serve hot.
Notes
Substitute with plant-based steak or egg alternatives for a vegetarian version.
Customize with sauces like sriracha, chimichurri, or aioli.
Make-ahead tip: wrap in foil and reheat in a toaster oven.
For less mess on the go, wrap tightly and store in sandwich containers.
