This Slow Cooker Beef Manhattan is a comforting American classic made easy. Tender chuck roast simmers all day in savory gravy, served over mashed potatoes and toasted bread for the perfect homestyle dinner.
Ingredients
2 lbs chuck roast, trimmed and cut into large chunks
1 packet onion soup mix
2 cups low-sodium beef broth
2 tbsp Worcestershire sauce
1 tbsp tomato paste
1 tsp dried thyme
1 tsp garlic powder
½ tsp black pepper
2 tbsp cornstarch
2 tbsp water (for slurry)
4 slices toasted sandwich bread
4 cups mashed potatoes
Fresh parsley, chopped (optional)
Instructions
Place the beef chunks into your slow cooker.
Sprinkle onion soup mix over the top, then add beef broth, Worcestershire sauce, tomato paste, thyme, garlic powder, and black pepper. Stir gently.
Cover and cook on low for 8 hours or high for 4–5 hours, until the beef is fork-tender.
Remove beef and set aside. Whisk cornstarch and water together, then stir into the slow cooker liquid.
Cook uncovered on high for 10–15 minutes until thickened.
Return shredded beef to the gravy and stir until well coated.
To serve, place a slice of toast on each plate, top with mashed potatoes, spoon beef and gravy over the top, and garnish with parsley.
Notes
Chuck roast provides the best texture and flavor balance.
If you prefer a lighter meal, skip the bread and serve over mashed cauliflower or rice.
For extra richness, add a splash of red wine or a pat of butter to the gravy before serving.
