Description

A wholesome and flavorful one-pot dish, slow cooker chicken with cherry tomatoes and basil brings together tender chicken, juicy tomatoes, and fresh basil for an easy, family-friendly meal that’s perfect for busy weeknights.


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts

  • 2 cups cherry tomatoes, halved if large

  • 4 garlic cloves, minced

  • 2 tablespoons olive oil

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tablespoons balsamic vinegar (optional)

  • ½ cup fresh basil leaves, chopped (added at the end)


Instructions

  • Season the chicken with salt and pepper.

  • Place olive oil at the bottom of a slow cooker.

  • Add chicken, then top with garlic, cherry tomatoes, and optional balsamic vinegar.

  • Cover and cook on low for 5–6 hours or high for 2.5–3.5 hours, until chicken is tender.

  • Shred or slice the chicken and stir in chopped fresh basil just before serving.

  • Serve over pasta, rice, or crusty bread as desired.

Notes

Thighs are recommended for juicier results.

Add red pepper flakes for spice or heavy cream for a creamy version.

Store leftovers in the fridge for 3 days or freeze for up to 2 months.

Do not add basil too early—it loses flavor when cooked too long.
