Description
A wholesome and flavorful one-pot dish, slow cooker chicken with cherry tomatoes and basil brings together tender chicken, juicy tomatoes, and fresh basil for an easy, family-friendly meal that’s perfect for busy weeknights.
Ingredients
2 lbs boneless, skinless chicken thighs or breasts
2 cups cherry tomatoes, halved if large
4 garlic cloves, minced
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons balsamic vinegar (optional)
½ cup fresh basil leaves, chopped (added at the end)
Instructions
Season the chicken with salt and pepper.
Place olive oil at the bottom of a slow cooker.
Add chicken, then top with garlic, cherry tomatoes, and optional balsamic vinegar.
Cover and cook on low for 5–6 hours or high for 2.5–3.5 hours, until chicken is tender.
Shred or slice the chicken and stir in chopped fresh basil just before serving.
Serve over pasta, rice, or crusty bread as desired.
Notes
Thighs are recommended for juicier results.
Add red pepper flakes for spice or heavy cream for a creamy version.
Store leftovers in the fridge for 3 days or freeze for up to 2 months.
Do not add basil too early—it loses flavor when cooked too long.
