Description
Slow Cooker Fajita Salsa Chicken is a flavorful and easy Tex-Mex dish made with chicken, bell peppers, onions, salsa, and fajita seasoning. It’s perfect for busy weeknights, meal prep, and can be served in tacos, bowls, or salads.
Ingredients

2–2.5 pounds boneless, skinless chicken breasts or thighs

3 bell peppers (red, green, yellow), sliced

1 large onion, sliced

1 jar (16 oz) salsa (mild, medium, or hot)

1 packet or 2 tablespoons of fajita seasoning

Juice of 1 lime

Optional: garlic cloves, corn, black beans
Instructions

Place the chicken at the bottom of the slow cooker.

Add the sliced bell peppers and onion on top.

Sprinkle with fajita seasoning.

Pour salsa evenly over all ingredients.

Add lime juice.

Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.

Once cooked, shred the chicken with two forks and stir everything together.
Notes
Use a salsa you enjoy, as it defines the flavor.
For extra heat, add jalapeños or spicy salsa.
To prevent a watery dish, avoid using too much salsa.
Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.
