Description

Slow Cooker Fajita Salsa Chicken is a flavorful and easy Tex-Mex dish made with chicken, bell peppers, onions, salsa, and fajita seasoning. It’s perfect for busy weeknights, meal prep, and can be served in tacos, bowls, or salads.

Ingredients

Scale
  • 22.5 pounds boneless, skinless chicken breasts or thighs

  • 3 bell peppers (red, green, yellow), sliced

  • 1 large onion, sliced

  • 1 jar (16 oz) salsa (mild, medium, or hot)

  • 1 packet or 2 tablespoons of fajita seasoning

  • Juice of 1 lime

  • Optional: garlic cloves, corn, black beans

Instructions

  • Place the chicken at the bottom of the slow cooker.

  • Add the sliced bell peppers and onion on top.

  • Sprinkle with fajita seasoning.

  • Pour salsa evenly over all ingredients.

  • Add lime juice.

  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.

  • Once cooked, shred the chicken with two forks and stir everything together.

Notes

Use a salsa you enjoy, as it defines the flavor.

For extra heat, add jalapeños or spicy salsa.

To prevent a watery dish, avoid using too much salsa.

Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.
