  • 2 pounds beef stew meat (or chuck roast cut into 1-inch cubes)

  • pounds baby gold or red potatoes, halved if large

  • ½ cup (1 stick) unsalted butter, melted

  • 6 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon onion powder

  • 1 teaspoon paprika

  • 1 teaspoon dried parsley or thyme

  • ¼ cup beef broth or Worcestershire sauce (optional)

  • Fresh parsley, for garnish


Instructions

  • Trim excess fat from the beef and cut into cubes.

  • If desired, sear the beef in a skillet to enhance flavor.

  • Halve the baby potatoes and place them on the bottom of the slow cooker.

  • Add the beef cubes on top of the potatoes.

  • In a bowl, combine melted butter, minced garlic, and seasonings.
