Description

A tender, juicy Slow Cooker Meatloaf that cooks low and slow for incredible flavor, soft texture, and a classic comfort-food finish.


Ingredients

  • 2 pounds ground beef (80/20)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard


Instructions

  1. Combine ground beef, breadcrumbs, eggs, onion, garlic, milk, Worcestershire sauce, and seasonings in a bowl.
  2. Mix gently and form into a loaf shape.
  3. Line slow cooker with a foil sling and place the loaf inside.
  4. Spread one-third of the glaze over the top.
  5. Cook on low for 4 to 6 hours until internal temperature reaches 160°F.
  6. Rest the loaf for 10 minutes before slicing.
  7. Brush remaining glaze over the warm meatloaf.

Notes

  1. Avoid overmixing the meat mixture to maintain tenderness.
  2. Broil the cooked loaf for a few minutes if you want a browned glaze.
  3. Store leftovers for up to four days or freeze for up to three months.
