- 2 pounds ground beef (80/20)
- 1 cup breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard
Instructions
- Combine ground beef, breadcrumbs, eggs, onion, garlic, milk, Worcestershire sauce, and seasonings in a bowl.
- Mix gently and form into a loaf shape.
- Line slow cooker with a foil sling and place the loaf inside.
- Spread one-third of the glaze over the top.
- Cook on low for 4 to 6 hours until internal temperature reaches 160°F.
- Rest the loaf for 10 minutes before slicing.
- Brush remaining glaze over the warm meatloaf.
Notes
- Avoid overmixing the meat mixture to maintain tenderness.
- Broil the cooked loaf for a few minutes if you want a browned glaze.
- Store leftovers for up to four days or freeze for up to three months.
