  • 1 tbsp olive oil

  • 1 yellow onion, diced

  • 3 cloves garlic, minced

  • 1 can (10 oz) Rotel tomatoes with green chilies

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup frozen or canned corn

  • 4 cups low-sodium chicken or vegetable broth

  • 1½ cups shredded cheddar cheese (or pepper jack)

  • 1 tsp chili powder

  • ½ tsp smoked paprika

  • Salt and black pepper, to taste

Optional Toppings:

  • Crushed tortilla chips

  • Diced avocado

  • Jalapeño slices

  • Sour cream

  • Chopped green onions

  • Fresh cilantro

  • Lime wedges


Instructions

  • Brown the meat: In a skillet over medium heat, cook ground beef in olive oil until browned. Add onions and cook until translucent. Stir in garlic and cook for 1 minute. Drain excess fat.

  • Transfer to the slow cooker: Pour in the cooked beef mixture. Add black beans, corn, Rotel tomatoes, seasonings, and broth. Stir well.

  • Cook: Cover and cook on Low for 6–8 hours or High for 3–4 hours.

  • Add cheese: In the last 30 minutes, stir in shredded cheese until fully melted and smooth.

  • Serve: Let the soup rest for 5 minutes. Ladle into bowls and add desired toppings.

Notes

For a vegetarian version, use extra beans or lentils and vegetable broth.

To thicken, mash some beans or stir in a cornstarch slurry.

Stir in ¼ cup heavy cream at the end for extra richness.

Store leftovers in the fridge for up to 3 days. Soup thickens as it cools—add broth when reheating.
