Ingredients

4 boneless, skinless chicken breasts or thighs

1 ½ cups baby carrots

3 cups Yukon Gold or red potatoes, cubed

1 packet ranch seasoning (or homemade blend)

1 can (10.5 oz) cream of chicken soup (optional)

½ cup sour cream or Greek yogurt (optional)

½ cup chicken broth

Salt and pepper, to taste

Optional: fresh parsley for garnish
Instructions

Place baby carrots and cubed potatoes in the bottom of the slow cooker.

Lay chicken breasts or thighs over the vegetables.

Sprinkle ranch seasoning evenly over chicken and vegetables.

If using, mix cream of chicken soup with sour cream or yogurt and pour over top.

Add chicken broth for moisture.

Cover and cook on low for 6–8 hours or on high for 3–4 hours, until chicken is cooked through and vegetables are tender.

Garnish with parsley and serve.
