Ingredients

  • 4 boneless, skinless chicken breasts or thighs

  • 1 ½ cups baby carrots

  • 3 cups Yukon Gold or red potatoes, cubed

  • 1 packet ranch seasoning (or homemade blend)

  • 1 can (10.5 oz) cream of chicken soup (optional)

  • ½ cup sour cream or Greek yogurt (optional)

  • ½ cup chicken broth

  • Salt and pepper, to taste

  • Optional: fresh parsley for garnish


Instructions

  • Place baby carrots and cubed potatoes in the bottom of the slow cooker.

  • Lay chicken breasts or thighs over the vegetables.

  • Sprinkle ranch seasoning evenly over chicken and vegetables.

  • If using, mix cream of chicken soup with sour cream or yogurt and pour over top.

  • Add chicken broth for moisture.

  • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until chicken is cooked through and vegetables are tender.

  • Garnish with parsley and serve.

Notes

Sear chicken before slow cooking for extra flavor.

Cut vegetables into uniform sizes to ensure even cooking.
