S’mores Cookie Bars


Description

Soft, gooey S’mores Cookie Bars baked with layers of graham cookie dough, melted chocolate, and marshmallow for an easy, nostalgic dessert.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup marshmallow creme


Instructions

  1. Cream butter, brown sugar, and granulated sugar until smooth.
  2. Add egg and vanilla and mix until combined.
  3. In a separate bowl combine flour, graham crumbs, baking powder, and sea salt.
  4. Blend dry ingredients into wet ingredients to form dough.
  5. Press half the dough into a parchment-lined baking pan.
  6. Spread marshmallow creme evenly over the base and sprinkle chocolate chips.
  7. Crumble remaining dough on top to create the top layer.
  8. Bake until golden and allow to cool before slicing.

Notes

  1. Allow bars to cool fully for clean slices.
  2. Chill before cutting for even neater portions.
  3. Freeze up to three months if wrapped tightly.
