  • Yield: 24 cookies 1x

Description

Soft, tender gingerbread cookies with a chewy center and warm spice flavor, made with molasses, brown sugar, and classic holiday spices for the perfect seasonal treat.

Ingredients

  • Unsalted butter: 1/2 cup
  • Dark brown sugar: 3/4 cup
  • Unsulphured molasses: 1/3 cup
  • Large egg: 1
  • All-purpose flour: 2 1/4 cups
  • Baking soda: 1 teaspoon
  • Ground ginger: 1 tablespoon
  • Ground cinnamon: 1 teaspoon
  • Ground cloves: 1/2 teaspoon
  • Ground nutmeg: 1/4 teaspoon
  • Salt: 1/2 teaspoon
  • Granulated sugar for rolling (optional)

Instructions

  1. Cream the butter and dark brown sugar until light and fluffy.
  2. Mix in the molasses and egg until fully combined.
  3. Whisk together the flour, baking soda, salt, and spices.
  4. Stir dry ingredients into the wet mixture just until combined.
  5. Chill the dough for at least 45 minutes.
  6. Roll dough into balls and coat in sugar if desired.
  7. Arrange on a baking sheet and bake at 350°F until tops are puffed and slightly cracked.
  8. Cool on the pan before transferring to a rack.

Notes

  1. Do not overbake to keep cookies soft.
  2. Chilling the dough prevents spreading and improves flavor.
  3. Fresh spices make a noticeable difference in taste.
