Ingredients
Cookies:
2½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon pumpkin pie spice
½ cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1 cup pumpkin purée (not pumpkin pie filling)
Cream Cheese Frosting:
4 oz cream cheese, softened
¼ cup butter softened
1½ cups powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice.
In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the egg, vanilla, and pumpkin purée until smooth.
Gradually mix in the dry ingredients until just combined.
Chill the dough for at least 30 minutes.
Scoop dough onto a prepared baking sheet, spacing 2 inches apart.
Bake for 11–13 minutes or until edges are set and centers are slightly soft.
Cool completely on a wire rack.
For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
Frost-cooled cookies and serve.
