Ingredients
1 lb boneless, skinless chicken breast, thinly sliced
2 tablespoons olive oil, divided
1 green or red bell pepper, sliced
2–3 fresh jalapeños, thinly sliced (adjust for heat)
1 small yellow onion, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
¼ cup low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon honey or brown sugar
½ teaspoon sesame oil
1 tablespoon cornstarch mixed with 2 tablespoons water
Sliced green onions (optional garnish)
Toasted sesame seeds (optional garnish)
Instructions
Slice and prepare all ingredients before cooking.
Heat 1 tablespoon of olive oil in a wok or large skillet over medium-high heat.
Add sliced chicken and cook for 5–6 minutes until golden brown and cooked through. Remove from the pan and set aside.
Add the remaining olive oil, then sauté garlic, ginger, and onion for 30 seconds until fragrant.
Add bell pepper and jalapeños, cooking until tender-crisp.
Return the chicken to the pan. Pour in soy sauce, rice vinegar, honey, sesame oil, and cornstarch slurry.
Stir constantly until the sauce thickens and coats the chicken and vegetables evenly.
Garnish with sesame seeds and green onions before serving.
Notes
Adjust spice level by removing jalapeño seeds or using milder peppers.
Great with rice, noodles, or cauliflower rice.
For meal prep, store sauce separately to keep vegetables crisp.
Works equally well with chicken thighs or tofu.
