Description

These Spicy Ramen Noodles are a quick and flavorful twist on classic ramen—packed with chili garlic heat, umami-rich sauce, and fresh toppings. Perfect for busy weeknights when you crave bold flavor in under 30 minutes.


Ingredients

  • 2 packs ramen noodles (discard seasoning packet)

  • 2 tablespoons sesame oil

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon chili garlic sauce or gochujang

  • 1 teaspoon brown sugar or honey

  • 2 cups chicken or vegetable broth

  • ½ cup shredded carrots

  • ½ cup sliced bell peppers

  • 1 cup chopped spinach or bok choy

  • 1 soft-boiled egg

  • ½ cup cooked chicken, shrimp, or tofu

  • 1 green onion, thinly sliced

  • Toasted sesame seeds, for garnish


Instructions

  • Heat sesame oil in a skillet or saucepan over medium heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.

  • Stir in chili garlic sauce (or gochujang), soy sauce, rice vinegar, and brown sugar. Cook for 1–2 minutes until slightly thickened.

  • Boil ramen noodles in a separate pot for 2–3 minutes until tender. Reserve ¼ cup of cooking water and drain the rest.

  • Add the noodles to the skillet and toss until evenly coated in the spicy sauce.

  • For a soupy version, pour in the chicken or vegetable broth and simmer for 1–2 minutes.

  • Mix in vegetables and protein, cooking until heated through.

  • Transfer to serving bowls, top with a soft-boiled egg, green onions, sesame seeds, and a drizzle of chili oil if desired.

  • Serve immediately while hot.

Notes

Adjust spice level by increasing or reducing chili garlic sauce.

Use vegetable broth and tofu for a vegan-friendly option.

Store noodles and broth separately to avoid sogginess.

Add a spoonful of miso paste or peanut butter for a richer flavor.
