Ingredients
-
2 packs ramen noodles (discard seasoning packet)
-
2 tablespoons sesame oil
-
3 cloves garlic, minced
-
1 tablespoon fresh ginger, grated
-
2 tablespoons soy sauce
-
1 tablespoon rice vinegar
-
1 tablespoon chili garlic sauce or gochujang
-
1 teaspoon brown sugar or honey
-
2 cups chicken or vegetable broth
-
½ cup shredded carrots
-
½ cup sliced bell peppers
-
1 cup chopped spinach or bok choy
-
1 soft-boiled egg
-
½ cup cooked chicken, shrimp, or tofu
-
1 green onion, thinly sliced
-
Toasted sesame seeds, for garnish
Instructions
-
Heat sesame oil in a skillet or saucepan over medium heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
-
Stir in chili garlic sauce (or gochujang), soy sauce, rice vinegar, and brown sugar. Cook for 1–2 minutes until slightly thickened.
-
Boil ramen noodles in a separate pot for 2–3 minutes until tender. Reserve ¼ cup of cooking water and drain the rest.
-
Add the noodles to the skillet and toss until evenly coated in the spicy sauce.
-
For a soupy version, pour in the chicken or vegetable broth and simmer for 1–2 minutes.
-
Mix in vegetables and protein, cooking until heated through.
-
Transfer to serving bowls, top with a soft-boiled egg, green onions, sesame seeds, and a drizzle of chili oil if desired.
-
Serve immediately while hot.
Notes
Adjust spice level by increasing or reducing chili garlic sauce.
Use vegetable broth and tofu for a vegan-friendly option.
Store noodles and broth separately to avoid sogginess.
Add a spoonful of miso paste or peanut butter for a richer flavor.
