- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup fresh spinach, chopped
- 4 ounces cream cheese, softened
- 1/2 cup shredded mozzarella
- 2 tablespoons grated Parmesan
- 2 garlic cloves, minced
- 1/2 teaspoon Italian seasoning
Instructions
- Pat chicken dry and cut a pocket into the thickest side of each breast.
- Season the outside of the chicken with garlic powder, onion powder, paprika, salt, and pepper.
- In a bowl, mix cream cheese, mozzarella, Parmesan, spinach, garlic, and Italian seasoning until smooth.
- Stuff each chicken breast with the filling and secure with toothpicks if needed.
- Heat olive oil in a skillet and sear chicken on both sides until golden.
- Transfer to a baking dish and bake at 375°F for 18–22 minutes or until internal temperature reaches 165°F.
- Let chicken rest for 5 minutes before serving.
Notes
- Frozen spinach can be used if fully thawed and squeezed dry.
- Reheat gently with a splash of broth to prevent drying.
- Prepare chicken up to one day ahead before cooking.
