Description

These Strawberry Cheesecake Cinnabon Rolls combine fluffy cinnamon roll dough, rich cream cheese filling, and sweet strawberry swirls for an indulgent breakfast or dessert. Topped with creamy frosting, they’re the perfect fusion of two classic treats—cinnamon rolls and cheesecake.

Ingredients

Scale

Dough:

  • 1¼ cups warm milk (105–115°F)

  • 2¼ tsp active dry yeast

  • ¼ cup granulated sugar

  • 3¾ cups bread flour

  • 1 tsp salt

  • 1/3 cup unsalted butter, softened

  • 2 large eggs

Cheesecake Filling:

  • 8 oz full-fat cream cheese, softened

  • ½ cup unsalted butter, softened

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup diced strawberries (fresh or thawed from frozen)

  • Optional: 1 tbsp strawberry preserves or 1 tsp lemon zest

Cinnamon Layer (Optional):

  • 2 tbsp melted butter

  • ⅓ cup sugar mixed with 1 tsp cinnamon

Frosting:

  • 2 oz cream cheese

  • 1 cup powdered sugar

  • 23 tbsp milk

  • Optional: 2 tbsp strawberry puree for flavor

Instructions

  1. Activate Yeast: In a bowl, mix warm milk, yeast, and sugar. Let sit 5–10 minutes until frothy.

  2. Make Dough: Add flour, salt, butter, and eggs to the yeast mix. Knead 8–10 minutes until smooth. Cover and let rise 1 hour until doubled.

  3. Prepare Filling: Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Fold in strawberries and preserves gently.

  4. Roll Dough: On floured surface, roll dough into a 12×15-inch rectangle. Spread cheesecake filling evenly over dough.

  5. Roll and Cut: Roll into a log. Slice into 1½-inch rolls (makes 10–12).

  6. Second Rise: Place in a greased pan. Let rise 45–60 minutes, until puffy.

  7. Bake at 350°F for 25–30 minutes. Cover with foil if browning too fast.

  8. Frosting: Mix cream cheese, powdered sugar, milk, and strawberry puree (optional).

  9. Serve: Let rolls cool slightly, then top with frosting. Enjoy warm.

Notes

Chill the rolled log for 10 minutes before slicing for clean cuts.

Let frosted rolls sit at room temperature for 10 minutes before serving.

Store in fridge up to 5 days or freeze unfrosted rolls up to 2 months.
