Ingredients
For the crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
For the filling:
1 ½ pounds (24 oz) cream cheese, softened
1 ¼ cups granulated sugar
3 large eggs
½ cup sour cream
1 teaspoon vanilla extract
1 tablespoon lemon zest
For the topping (optional):
1 cup fresh strawberries
2 tablespoons sugar (for reduction or garnish)
Instructions
Preheat oven to 325°F (163°C). Lightly grease a 9-inch springform pan.
Prepare crust: In a bowl, mix graham cracker crumbs and sugar. Stir in melted butter until evenly moistened. Press into the bottom of the pan. Bake for 8–10 minutes until lightly golden. Let cool completely.
Make filling: In a large bowl, beat softened cream cheese until smooth. Gradually add sugar. Add eggs one at a time, mixing on low. Blend in sour cream, vanilla, and lemon zest until just combined.
Bake: Pour the filling over the cooled crust. Smooth the top. Bake for 60–65 minutes until the edges are set and the center is slightly jiggly.
Cool gradually: Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour. Remove and cool completely at room temperature.
Chill: Refrigerate for at least 4 hours or overnight for best results.
Optional topping: Simmer strawberries and sugar until slightly thickened. Cool and spread over the cheesecake before serving, or garnish with fresh strawberries.
