For the crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ¼ cup melted butter

For the filling:

  • 16 oz cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tbsp lemon juice

  • 1 tbsp lemon zest

  • 1 cup fresh strawberries, hulled and sliced

For the topping (optional):

  • 1 cup fresh strawberries

  • 2 tbsp sugar (adjust to taste)


Instructions

  1. Preheat oven to 350°F (177°C). Lightly grease a 9-inch springform pan.

  2. Mix graham cracker crumbs and sugar in a bowl. Add melted butter and stir until moistened.

  3. Press the mixture into the bottom of the pan and bake for 5–8 minutes until lightly golden. Let cool slightly.

  4. Reduce oven temperature to 300°F (149°C).

  5. In a large bowl, beat softened cream cheese and sugar on low speed until smooth.

  6. Add eggs one at a time, mixing gently. Stir in lemon juice and lemon zest.

  7. Pour mixture over cooled crust. Layer sliced strawberries on top.

  8. Bake for 60 minutes, until edges are set and center is slightly jiggly.

  9. Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour.

  10. Chill in the fridge for at least 6 hours, preferably overnight.

  11. For topping, simmer strawberries and sugar until slightly thickened. Cool, then spread over chilled cheesecake.

  12. Slice and serve with optional whipped cream or fresh berries.
