  • 3 cups cooked jasmine rice
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • Pinch of salt
  • 2 cups corn (fresh, frozen, or canned)
  • 1 tbsp butter
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream or Greek yogurt
  • ½ cup cotija cheese, crumbled
  • 12 tbsp lime juice
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)
  • Salt to taste
  • 1 avocado, sliced
  • Fresh cilantro
  • Jalapeño slices
  • Lime wedges
  • Crushed tortilla chips (optional)


Instructions

  1. Season chicken with oil, spices, and lime juice.
  2. Cook chicken in a hot skillet until browned and cooked through.
  3. Prepare rice and mix with lime juice, cilantro, and salt.
  4. Char corn in a skillet with butter until golden.
  5. Mix corn with mayo, sour cream, cotija, lime, and spices.
  6. Assemble bowl with rice, chicken, and street corn topping.
  7. Garnish with avocado, cilantro, jalapeño, and lime wedges.
