- ⅓ cup mayonnaise
- ⅓ cup sour cream or Greek yogurt
- ½ cup cotija cheese, crumbled
- 1–2 tbsp lime juice
- ½ tsp chili powder
- ½ tsp garlic powder
- ¼ tsp cayenne pepper (optional)
- Salt to taste
- 1 avocado, sliced
- Fresh cilantro
- Jalapeño slices
- Lime wedges
- Crushed tortilla chips (optional)
Instructions
- Season chicken with oil, spices, and lime juice.
- Cook chicken in a hot skillet until browned and cooked through.
- Prepare rice and mix with lime juice, cilantro, and salt.
- Char corn in a skillet with butter until golden.
- Mix corn with mayo, sour cream, cotija, lime, and spices.
- Assemble bowl with rice, chicken, and street corn topping.
- Garnish with avocado, cilantro, jalapeño, and lime wedges.
