Description

Cheesy Taco Ranch Bites made with seasoned beef, creamy ranch, and crispy shells. A quick, crowd-pleasing appetizer perfect for parties, game day, or potlucks.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1/2 cup water
  • 3/4 cup ranch dressing
  • 1 1/2 cups shredded cheddar or Mexican-blend cheese
  • 24 mini phyllo tart shells
  • 1/2 cup diced tomatoes with green chiles, drained (optional)
  • 2 tablespoons chopped fresh cilantro (optional)


Instructions

  1. Preheat the oven to 375°F.
  2. Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks.
  3. Drain excess grease, then stir in taco seasoning and water.
  4. Simmer for 2 to 3 minutes until thickened.
  5. Remove from heat and mix in ranch dressing and shredded cheese.
  6. Arrange phyllo shells on a baking sheet.
  7. Spoon the taco ranch mixture evenly into each shell.
  8. Bake for 8 to 10 minutes until heated through and lightly golden.
  9. Let cool slightly before serving.

Notes

  1. Drain tomatoes well to avoid soggy shells.
  2. Do not overfill the phyllo cups to keep them crisp.
  3. These bites can be reheated in the oven at 350°F for best texture.
