Instructions

  • Prepare Cake Layers:
    Preheat the oven to 350°F. Grease and line 9-inch cake pans. In a bowl, mix graham crumbs, flour, baking powder, and salt. Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. Alternately, add dry ingredients and sour cream. Divide the batter between the pans and bake for 25–30 minutes. Cool completely.

  • Make Ganache:
    Heat the cream until it simmers. Pour over chocolate chips, let sit 2–3 minutes, then stir until smooth. Let cool slightly to thicken.

  • Create Marshmallow Topping:
    Use store-bought fluff or make a meringue by beating egg whites, sugar, and cream of tartar over a double boiler, then whipping until stiff peaks form.

  • Assemble Cake:
    Place one cake layer on a stand. Spread ganache evenly. Add a second layer and repeat. Top with marshmallow mixture.

  • Toast the Top:
    Use a kitchen torch or broiler to toast the marshmallow topping until golden.

Notes

Let the ganache cool to a spreadable consistency before layering.
