- 1 roll refrigerated sugar cookie dough
- Cooking spray
- Cocoa powder
- 1 cup mascarpone cheese
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 2 teaspoons vanilla extract
- 1 tablespoon espresso powder dissolved in 1 tablespoon hot water
- 1 tablespoon cocoa powder
- Chocolate shavings
- Mini chocolate chips
Instructions
- Preheat oven to 350°F and lightly grease a mini muffin pan with cooking spray.
- Press small portions of cookie dough into each well to form cups.
- Bake 10–12 minutes until the edges are golden.
- Cool briefly, then press centers to maintain the cup shape.
- Whip heavy cream to stiff peaks.
- Combine mascarpone, powdered sugar, vanilla, and espresso mixture.
- Fold whipped cream into the mascarpone mixture.
- Fill cooled cookie shells with tiramisu filling.
- Dust with cocoa powder and top with chocolate shavings if desired.
- Chill 30 minutes before serving.
Notes
- Let cookie shells cool completely before filling to prevent sogginess.
- Chill the filling before piping for firmer texture.
