Description

Soft and chewy toffee cookies made with buttery dough, caramelized toffee bits, and golden edges for the perfect bakery-style treat.


Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 1 cup toffee bits
  • ½ cup chocolate chips (optional)
  • 1 tablespoon cornstarch (optional)


Instructions

  1. Cream the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the eggs and vanilla extract and mix until smooth.
  3. Whisk together the flour, baking soda, baking powder, salt, and optional cornstarch in a separate bowl.
  4. Fold the dry ingredients into the wet mixture until a thick dough forms.
  5. Stir in the toffee bits and optional chocolate chips.
  6. Chill the dough for at least 20 minutes.
  7. Scoop dough onto a lined baking sheet.
  8. Bake at 350°F for 10–12 minutes until edges are golden and centers are soft.
  9. Cool on a rack before serving.

Notes

  1. Chill the dough to prevent spreading.
  2. Use brown butter for deeper flavor.
  3. Avoid placing exposed toffee bits on the baking sheet to prevent melting.
