Meatloaf Base:

  • 2 pounds ground beef (80/20)

  • 1 cup breadcrumbs

  • 2 large eggs

  • 1/2 cup marinara sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

Filling & Toppings:

  • 1½ cups shredded mozzarella cheese (divided)

  • 1/2 cup sliced pepperoni

  • 1 cup marinara sauce (plus extra for serving)

  • Optional: diced bell peppers, olives, or mushrooms

  • Optional: fresh basil or parsley, for garnish


Instructions

  • Preheat Traeger grill to 225°F.

  • In a large mixing bowl, gently mix ground beef, breadcrumbs, eggs, 1/2 cup marinara sauce, and seasonings. Don’t overmix.

  • Form the meat mixture into a loaf shape on a foil-lined tray. Create a cavity in the center, add ½ cup shredded mozzarella and a few pepperoni slices, then fold the meat to seal.

  • Place the meatloaf on the grill and smoke at 225°F for about 2 hours, or until internal temp reaches 150°F.

  • Increase grill temp to 325°F. Spread marinara sauce on top of the loaf, then sprinkle with remaining mozzarella and top with pepperoni.

  • Continue cooking for 10–15 minutes, or until cheese is melted and bubbly and internal temp reaches 160°F.

  • Let rest for 10 minutes before slicing. Garnish with fresh herbs if desired.
