This refreshing Watermelon Cucumber Feta Salad combines sweet, salty, and cool flavours for the perfect summer side dish. Juicy watermelon, crisp cucumbers, tangy feta, and fresh mint come together in just minutes for a hydrating, no-cook salad ideal for BBQs, picnics, or light lunches.
Ingredients
4 cups watermelon, cubed (seedless and chilled)
2 cups cucumber, thinly sliced (English or Persian)
¾ cup feta cheese, crumbled
¼ cup fresh mint, chopped
2 tablespoons olive oil (extra virgin)
2 tablespoons lime juice (or lemon juice)
Salt, to taste (optional)
Instructions
Cube the watermelon and slice the cucumber into thin half-moons.
Chop the fresh mint and crumble the feta cheese.
In a large bowl, gently toss the watermelon and cucumber together.
Drizzle with olive oil and lime juice. Add salt if desired.
Fold in the crumbled feta and chopped mint.
Chill for 15–30 minutes before serving for the best flavour.
Notes
Use block feta in brine for a creamier texture.
Avoid overdressing to prevent sogginess.
Chill all ingredients before mixing to keep the salad crisp.
Do not mix too far in advance; prepare just before serving.
Basil can be substituted for mint if preferred.
