Ingredients

  • White beans, drained and rinsed
  • Chicken broth
  • Canned green chiles
  • Yellow onion, diced
  • Garlic cloves, minced
  • Jalapeño, seeded and diced
  • Ground cumin
  • Chili powder
  • Dried oregano
  • Paprika or cayenne
  • Corn (optional)
  • Cream cheese or Greek yogurt
  • Lime juice
  • Fresh cilantro
  • Salt and black pepper


Instructions

  1. Sauté diced onion, garlic, and jalapeño until softened.
  2. Stir in spices to bloom their flavor.
  3. Add chicken broth, white beans, chicken, and green chiles.
  4. Simmer until the mixture thickens and flavors combine.
  5. Mash some beans for natural thickening if desired.
  6. Stir in cream cheese or Greek yogurt for a creamy finish.
  7. Add lime juice and cilantro before serving.

Notes

  1. Add dairy after reheating if freezing the chili.
