White Chicken Lasagna Soup

White Chicken Lasagna Soup

  • Author: Rasha Annan
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

A creamy, comforting soup that captures all the flavors of white chicken lasagna—tender chicken, broken noodles, and melty cheeses—without the layering or long bake time. Perfect for cozy dinners or family gatherings.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (or 1 lb raw chicken breast/thighs)

  • 810 lasagna noodles, broken into pieces (or substitute bow-tie/egg noodles)

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 4 cups chicken broth

  • 1 cup heavy cream (or half-and-half for lighter version)

  • 1 cup fresh spinach leaves

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ cup ricotta or cream cheese (optional for extra creaminess)

  • 2 tbsp olive oil or butter

  • 1 tsp Italian seasoning

  • Fresh basil or parsley, chopped (for garnish)

  • Salt and black pepper, to taste

  • Optional: red pepper flakes or sundried tomatoes for variation

Instructions

  • Heat olive oil or butter in a large pot over medium heat. Add diced onion and sauté until translucent. Stir in minced garlic and cook until fragrant.

  • Add chicken (raw or pre-cooked). If using raw, lightly brown it on all sides.

  • Pour in chicken broth and Italian seasoning. Bring to a gentle simmer.

  • Break lasagna noodles into bite-sized pieces and add them to the pot. Stir occasionally to prevent sticking. Cook until noodles are al dente (about 8–10 minutes).

  • If using raw chicken, remove it once cooked through, shred it, and return it to the pot.

  • Reduce the heat to low. Stir in heavy cream, mozzarella, Parmesan, and optional ricotta or cream cheese until smooth and creamy.

  • Add spinach and cook just until wilted. Adjust salt, pepper, and seasoning as needed.

  • Ladle soup into bowls, garnish with fresh basil or parsley, and serve with crusty bread or garlic toast.

Notes

For a lighter version, replace heavy cream with half-and-half or whole milk.

To avoid mushy noodles in leftovers, store noodles separately or slightly undercook them.

Rotisserie chicken is a time-saver—add it at the end to avoid overcooking.

For extra depth, add roasted garlic or sundried tomatoes before simmering.
