Description

This simple and healthy one-pan chicken dinner features tender chicken thighs, roasted potatoes, carrots, and broccoli seasoned with garlic and herbs. It’s perfect for a quick and easy weeknight meal.


Ingredients

  • 4 boneless, skinless chicken thighs

  • 2 cups baby potatoes, halved

  • 2 carrots, sliced

  • 1 ½ cups broccoli florets

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried Italian herbs

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Juice of ½ lemon

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 400°F (200°C).

  • Place chicken, potatoes, carrots, and broccoli in a large pan.

  • Whisk together olive oil, garlic, herbs, salt, pepper, and lemon juice in a small bowl.

  • Drizzle the mixture over the chicken and vegetables. Toss gently to coat.

  • Arrange everything in a single layer and bake for 25–30 minutes or until the chicken is cooked through and the vegetables are tender.

  • Garnish with chopped parsley and serve hot.

Notes

You can substitute chicken thighs with chicken breasts, but adjust cooking time accordingly.

Add a pinch of red pepper flakes if you prefer a little heat.

For crispier edges, broil for the last 2–3 minutes.
