Description
This simple and healthy one-pan chicken dinner features tender chicken thighs, roasted potatoes, carrots, and broccoli seasoned with garlic and herbs. It’s perfect for a quick and easy weeknight meal.
Ingredients
4 boneless, skinless chicken thighs
2 cups baby potatoes, halved
2 carrots, sliced
1 ½ cups broccoli florets
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried Italian herbs
½ teaspoon salt
¼ teaspoon black pepper
Juice of ½ lemon
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 400°F (200°C).
Place chicken, potatoes, carrots, and broccoli in a large pan.
Whisk together olive oil, garlic, herbs, salt, pepper, and lemon juice in a small bowl.
Drizzle the mixture over the chicken and vegetables. Toss gently to coat.
Arrange everything in a single layer and bake for 25–30 minutes or until the chicken is cooked through and the vegetables are tender.
Garnish with chopped parsley and serve hot.
Notes
You can substitute chicken thighs with chicken breasts, but adjust cooking time accordingly.
Add a pinch of red pepper flakes if you prefer a little heat.
For crispier edges, broil for the last 2–3 minutes.
